Bread has always Been the Centerpiece
Founder Greg Paninos grew up with bread as a centerpiece of every meal, every holiday, and every memory that felt like home. Warm loaves fresh from the oven, the smell filling the house, the comfort of sharing a meal with loved ones.

—until suddenly, you have no choice.
The Gluten-Free Wake-Up Call
“One moment, I was fine. The next, I was doubled over—sharp, searing pain tearing through me. Hours later, I found myself in a hospital bed, barely escaping with my life.” Greg didn’t realize at the time that this was more than just a random medical emergency—it was a life changing warning.
That event was more than Twenty-five years ago. Greg’s appendix had ruptured. Other digestive issues continued creeping in, but he resisted the signs. Gradually, his journey to being gluten-free began.
I wasn’t willing to accept a life without good bread, and I knew others felt the same.
And now, countless trial-and-error batches later, I get to share it with you. Because no one should have to choose between their health and the simple joy of good bread.
I made a commitment—not just to my health, but to those faced with the same choice.
And it all started in my home kitchen, the recipe that was going to bring back the bread I grew up loving. Not just a “passable” gluten-free bread, but real bread. The kind that makes you close your eyes after the first bite. The kind that brings people together around the table. The kind you don’t have to apologize for.
